Step 2: Pick the petals off of the calyx. The green parts can give a bitter flavor, but a little bit of green is okay.This step is probably the hardest part of making dandelion wine. It does take some time: maybe an hour for enough petals to make one gallon of wine. But after a long winter, it's a great way to spend a warm spring day.
